According to the study “Trends in Food Sources and Diet Quality Among US Children and Adults” from Tufts University School of Nutrition Science and Policy, an analysis of the diets of American school-age children shows that even though the nutritional value of school lunches has increased dramatically, 80% of children’s meals from restaurants are of poor nutritional value. For many students, schools are the only place where meals of high nutritional value are readily available. Knowing that meals with high nutritional value are essential for the growth and development of these children, school nutrition directors have been working to expand options.
